Ingredients
  

  • 5 ounces 93% lean ground turkey, kept cold
  • 2 tablespoons panko breadcrumbs
  • 1 tablespoon milk
  • 1 tablespoon finely grated yellow onion
  • 1 tablespoon ketchup, divided
  • 1 teaspoon Dijon or yellow mustard, divided
  • 1/4 teaspoon Italian seasoning
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon kosher salt
  • Pinch of ground black pepper
  • 1/2 teaspoon olive oil, for the liner or basket

Method
 

  1. Preheat the air fryer to 350°F (177°C) for 3 minutes.
  2. Combine the panko and milk and let stand for 2 minutes.
  3. Add the turkey, onion, 2 teaspoons ketchup, 1/2 teaspoon mustard, and seasonings.
  4. Mix gently and shape one loaf about 4 inches long and no more than 1 1/2 inches thick.
  5. Place the loaf on a lightly oiled liner fitted beneath the food.
  6. Air fry at 350°F (177°C) for 11 minutes.
  7. Mix the remaining ketchup and mustard and brush the glaze over the loaf.
  8. Cook for 4 to 7 minutes more, until the center reaches 165°F (74°C).
  9. Rest for 5 minutes before slicing.

Notes

Do not overmix the ground turkey or form a tall, dense loaf.
Keep any parchment or foil entirely beneath the food.
