Ingredients
  

  • 1 8-inch flour tortilla
  • 1/2 cup shredded Monterey Jack, cheddar, or Mexican-style cheese blend
  • 2 tablespoons drained black beans or corn, optional
  • 1 tablespoon finely diced bell pepper or green onion, optional
  • 1 teaspoon salsa for serving, or a very thin smear inside the tortilla
  • Oil spray or 1/4 teaspoon neutral oil
  • Optional toppings such as salsa, avocado, lime, cilantro, Greek yogurt, or sour cream

Equipment

  • small plate or cutting board
  • pastry brush or oil spray
  • thin spatula or tongs
  • toothpick or small air-fryer-safe rack, optional

Method
 

  1. Preheat the air fryer to 370°F (188°C) for 3 minutes.
  2. Lay the tortilla flat on a plate or cutting board.
  3. Sprinkle the cheese over one half of the tortilla, leaving a small border.
  4. Add the drained beans, corn, bell pepper, or green onion if using.
  5. Fold the tortilla over the filling and press gently.
  6. Lightly spray or brush the outside with oil.
  7. Place the folded quesadilla in the air fryer basket and secure the edge if needed.
  8. Air fry at 370°F (188°C) for 5 to 7 minutes, flipping after 3 minutes.
  9. Stop when the tortilla is crisp and the cheese is fully melted.
  10. Rest for 1 to 2 minutes, remove any toothpick, and cut into wedges.
