Choosing and cutting the zucchini
Pick a firm zucchini with unbroken skin. Wash it under running water before cutting, even though you keep the peel. Trim the ends, cut the vegetable lengthwise into planks, then cut the planks into roughly half-inch-wide sticks. The exact number depends on the zucchini's shape. Very thin batons soften and burn quickly; thick wedges can stay watery before the coating browns.
Dry the cut faces with a clean towel. There is no long salt-and-wait step here: salting ahead draws out moisture and delays a quick one-person snack. Put a little salt in the breadcrumb mixture instead, and move the coated sticks straight to the basket. If your panko is coarse, press the crumbs gently onto each side rather than tossing until the sticks break.
A better crust from a tiny batch
The crust depends on three details: dry cut surfaces, a light binder and room for airflow. A mound of sticks in a small basket steams underneath, even if the top looks brown. Work in two rounds if necessary. Do not shake the basket vigorously while the coating is fragile; turn individual pieces with tongs. If the crumbs look pale but the zucchini is soft, another short minute may brown them, but watch the Parmesan.
The mayo in this recipe is a binder, not a dipping sauce. Use standard prepared mayonnaise from a sound, refrigerated container and follow the label's handling directions. Check ingredient labels if you avoid egg, wheat or milk: typical mayonnaise contains egg, panko contains wheat, and Parmesan contains milk. Pair a small serving with air fryer salmon for one for a meal, or make air fryer chickpeas for one on another day for a very different crunchy snack. Do not cook raw fish on this vegetable timing or in the same uncooked batch.
Storage and leftovers
Because zucchini releases moisture as it stands, the crumb coating softens in the fridge. The recipe is intentionally one serving so you can eat it warm. Refrigerate any cooked leftovers in a shallow covered container within two hours, or within one hour when the room is hotter than 90°F (32°C). Can I make these without breadcrumbs?

Should I peel or salt the zucchini first?

- Wash zucchini under running water, trim and cut into approximately half-inch-wide sticks. Pat cut faces dry. Preheat the air fryer to 375 F (190 C) if the model calls for it.
- Put mayonnaise in one bowl. Combine panko, Parmesan, garlic powder and salt in another. Lightly coat dry sticks with mayonnaise, then press on crumbs; do not pile on loose coating.
- Place in one layer with gaps. Air fry at 375 F (190 C) for an estimated 10 to 12 minutes, turning carefully halfway. Check from 8 minutes and remove when golden outside and tender inside; avoid burning cheese.
- Transfer with tongs, cool briefly and serve the full portion to one person while warm.
